Today the original “What I Ate Wednesday” blogger – Peas & Crayons – celebrates with her 50th WIAW post! Yay! And today, I’m sharing my very first WIAW.
I started off today worried about my cat. Bella and my sister’s dog got into a fight last week, and Bella suffered some injuries and infection. Unfortunately one of the wounds did not heal properly, and Bella had to have surgery to correct it and to remove the dead tissue. Poor girl…
To help me get things off my mind, I went for my run – I’m currently working on Couch-2-5k and today was my third day! When I work out in the mornings, I don’t like to have a heavy breakfast. So Carnation Instant Breakfast is my favorite, and today I had Strawberry Sensation!
For those of you who make things similar to Carnation Instant Breakfast (protein shakes, Slim Fast, or even smoothies) on a regular basis… you should DEFINITELY invest in a single-serve blender like mine! It has ounce measurements on the side, and all you do is pop the cup off and away you go! Mine is a Hamilton Beach Single-Serve Blender which I got at Meijer for only $9.99. (You can get it at Target for $15.99 – plus they have cute colors, too, like red and purple!)

My run went really well! I’m still just beginning and getting back into it, so I’m going very slow. But I seem to be keeping pretty consistent with my times, so that’s a great sign. :) A little while after my run I had my lunch, which was really more like a second breakfast… I sauteed up some mushrooms, onions and green peppers and threw them into an omelet. While I was flipping the omelet I totally forgot to add cheese (oooh I love cheese!) so I ended up melting some pepperjack and cheddar cheese on top – it was DEEEELISH!

We were finally able to go and pick up Bella from the vet around 5:30pm. I was so excited to see my baby! Her new surgical wounds are pretty brutal – a huge Y like incision that goes down her belly and into her thigh. She has three drains – one in her belly and two down near her bum. She also has a cone around her head so she won’t lick at her wounds or bite at her stitches. Poor little girl! But it is kind of comical to watch her try to manipulate that big huge cone around her head…

Ken and I watched her for a while and then helped her to get up onto her kitty tower – she wants to be elevated so she knows exactly what is going on at all times! After all the excitement, it was time to make some dinner. Tonight I made something that Ken inspired a few months back. I cooked up some mushroom flavored rice and orzo, sauteed more mushrooms, onions and some peas and carrots, and baked some BBQ chicken strips. Once everything was cooked, I threw it all together and served it in a bowl! I dubbed the recipe “Ken’s BBQ Chicken Rice Bowl” on MyFitnessPal.

So now I have to figure out what I’m going to have as a late-night snack while I do some work from home. I feel full but I know I haven’t had enough calories for the day – so maybe in a little while I will have one of my favorites… Nutella on bread! YUM!!!
