Yeah, it’s been a while since I made one of these posts! But it just so happened that I made a yummy dinner, thought about blogging, and found my hubby’s camera so I could take pictures.

Since Ken was working tonight, I wanted something simple. And usually when Ken is working, I try to make something that he doesn’t usually like. When I got home I remember my frozen salmon burgers that have been in the freezer for AGES waiting for someone to try them. Try them, I did, and it was delish!
What I love about these salmon burgers: they are frozen and individually wrapped. You can either throw them on the grill or bake them in the oven (which is what I did) and they have a yummy, smokey flavor. And to top it all off, each patty is only 100 calories! SAY WHAT!? Packed full of nutrition and flavor, I really didn’t even need the extras!
But oh, how I love the extras. Havarti cheese is one of my favorites, and I am in love with the Marzetti Otria Greek Yogurt Dill Cucumber Feta dip! It paired very well with the salmon, and also tastes great with crackers or fresh veggies.
The cinnamon applesauce was like dessert, but better because I knew I have been lacking on my fruits lately.
Overall it was a delicious dinner, although a little lonely. My cat did sit in the living room looking pretty watching me eat, though.
That’s all from me, for now! Look for another post on Saturday… I’ll be writing about my newest challenge for myself… a 6 week training program to run a 5k!
