It has been a while since I have made a “What I Ate Wednesday” post. Lately I’ve whined about how my diet isn’t helping me and I need to eat better, blah blah blah. So last week I tried really hard to eat food made at home, eat more fruits and vegetables, and drink water instead of coffee and pop. So far this week I haven’t been quite as successful, but I was rather impressed with the delicious meals I created last week. Feast your eyes upon a week in the belly of your RD on the Run!
Last weekend I went to the grocery store both on Saturday and on Sunday so I could get the best deals. I snagged a pint of strawberries for $1, plus they had discounted pre-sliced onions and peppers, so I made up this yummy omelette Sunday morning while I meal prepped.
I made these yummy little egg cups with mushrooms, some of the sliced onions and peppers and shredded gouda cheese. They were a perfect pop in the microwave quick breakfast during the week. After an early morning run they were a perfect protein paired with my chocolate little bites shredded wheat!
I enjoyed some of those beautiful strawberries on top of a spring mix salad. I had prepped a ton of chicken breast that I chopped up and portioned out. This salad had 3 cups of spring mix, 3 ounces of seasoned backed chicken breast, 1/2 cup of sliced strawberries, 2 tablespoons of blue cheese and 2 tablespoons of light raspberry vinaigrette dressing. So delicious!
I used some more of the sliced onions and peppers, 2 ounces of the seasoned baked chicken breast, 1/4 of an avocado, corn tortilla chips and melted Mexican cheese blend to make these amazingly delicious nachos for dinner. I splashed a little bit of salsa on top for color and flavor.
Since there was still avocado left after making the nachos, I used the rest on a grilled egg, cheese and avocado sandwich. YUM!
My last creation used up the rest of the mushrooms, onions and green peppers, as well as finishing off the fresh strawberries. I scrambled some eggs with the veggies mentioned above and cheese, then put sliced strawberries and bananas in a bowl.
Overall I feel really good about my food choices last week. I tried to eat a serving of fruit and a serving of vegetables every day. Of course not all of my meals are pictured here, but these were definitely of the best ones – they looked good, they tasted good and best of all they made me feel good!
